We have partnered with Stephane Turcotte, the brewmaster and co-owner of local Victoria brewery Ile Sauvage for a unique beer & food pairing.

Dedicated to the art of sour beer in the Orval tradition of French-speaking Belgium, île Sauvage focuses on uncategorical beer flavours achieved by a handful of specific techniques not associated with the average beer-making routine. These include long fermentation processes; the use of wild yeast and house-mixed bacterial and lacto cultures and the addition of flavours like rosemary, coriander and sea salt. Everything is blended to taste. Stephane is also a certified Ciceron, the beer version of a sommelier.

The delivered bag contains 4 local craft beers paired with 4 culinary dishes that were suggested by Stephane to pair perfectly. The bag is designed to be consumed by one person but could be shared. Each bag will contain tasting notes on each pairing and Stephane will lead the group through a 1-hour online tasting with the option to ask questions and interact with the other tasters in the group.
